We use a variety of plums throughout year. In the UK, most of the plum crop ripens in July to September so we endeavour to create most of our Plum Liqueur during this period.
- Opal is a reddish purple dessert plum with sweet yellow flesh which ripens in late July.
- Victoria best known and most popular of English plums.
- Marjories Seedling is the best known late plum. Although often classified as a culinary plum it is actually much better as a dessert plum.
- Ruby Sun has a red skin with yellow flesh and is South African variety that is available throughout the year.
The ginger liqueur is made by combining a ginger liquor with brandy that is then filtered multiple times using a proprietary filtration process.
The cranberry liqueur is made from steeping frozen cranberries with gin in the bottle for at least 3 months.
The plum liqueur is made from plums, sugar and vodka and is left to mature in mason jars for at least 3 months.
